Mediterranean Quinoa Salad (High-Protein & Plant-Based)

A refreshing and filling side dish packed with plant protein, fiber, and Mediterranean flavor.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • ¼ cup sliced Kalamata olives
  • 2 tbsp finely chopped red onion
  • 2 tbsp chopped fresh parsley
  • Juice of 1 lemon
  • 1–2 tbsp olive oil
  • Salt & pepper to taste

Instructions:
Combine all ingredients in a bowl. Toss well and chill for 15–30 minutes before serving.

Ingredients:

Instructions:
Chop vegetables into even chunks. Toss in olive oil, minced garlic, and herbs. Marinate for 30 minutes. Skewer and grill until lightly charred, about 8–10 minutes.
